A juicy honey-roast garlic pork fillet with a super tasty honey, mustard and garlic marinade!
Pork fillet (tenderloin) is one of those cuts of meat that looks really impressive, but is surprisingly easy to cook. It can be pan-fried in a flash, but if you’re feeling especially lazy it can just be popped in the oven for 30-40 minutes and you’ll have a beautiful dinner ready for your family. This cut is very lean and tender, but can dry out quite easily due to its lack of fat. To combat this tendency, I like to prepare a delicious marinade when I’m cooking a pork fillet which helps to keep it juicy and moist.
One of my favourite combinations is a marinade of sweet runny honey, wholegrain mustard and chopped garlic. If you have the time, the meat really benefits from preparing the marinade an hour or two in advance of cooking, pouring it over the meat and letting all those yummy flavours infuse into the meat while it rests in the fridge in a covered dish. If you are short on time, fear not! The pork will still be scrumptious if you pour on the marinade right before it goes in the oven.
You really can’t go wrong with this recipe. It’s great choice when you are sick of chicken breasts or plain old pork chops. Just slice up and serve with a salad or some cooked vegetables and you have a delicious, low-fat dinner. Just make sure you keep some of that scrummy marinade to spoon over your meat. It’s so good you won’t want to waste a drop. Yum!

A juicy honey-roast garlic pork fillet with a super tasty honey, mustard and garlic marinade!
Ingredients
- 1 pork fillet (tenderloin)
- 4 tbsp olive oil
- 2 tbsp runny honey
- 2 tbsp wholegrain mustard
- juice of 2 lemons
- 4 garlic cloves, peeled and chopped
- 4 sprigs of thyme, flowers only
- pinch of salt
- pinch of freshly ground black pepper
Instructions
- In a bowl mix the olive oil, honey, mustard, lemon juice, garlic, thyme, salt and pepper.
- Place the pork fillet in a large roasting dish. Pour the marinade mixture over the pork. Cover the dish, and leave in the fridge for 1-2 hours.
- Preheat oven to 190°C/375°F/Gas Mark 5.
- Remove the pork from the fridge, uncover and and spoon some of the marinade back over the top of the pork.
- Place in the oven for 35-45 minutes until the meat is cooked through.
- Let the pork rest for 5-10 minutes before carving into slices.
- Serve immediately with some of the marinade from the roasting dish spooned over the top.
